cinnamon sugar puff cupcakes
School started today but I don’t have class Mondays (or Fridays, for that matter), so the first day of class starts tomorrow-ish. Later today, if you wish to be accurate. I bake therapeutically, so I thought what better way to start the school year with a relaxing session of cupcake baking from my new book, Cupcakes!
I chose this recipe as my first one because… the other recipes required sour cream, which I don’t stock in my fridge… because I didn’t know basic cupcake recipes required sour cream usually. But now I know. I’m not going to put up the recipe because I think Elinor Klivane, the author of this book, would not appreciate me handing out her recipes instead of encouraging you guys to buy her book. Its very pretty.
I will say though, the recipe called for nutmeg and I lacked nutmeg in my cupcakes because my nutmeg is at Patrick’s apartment, due to pumpkin pie baking needs, but he is convinced he doesn’t have it. He does.
The recipe is pretty basic… cream the sugar and butter…
add the dry goods and spoon into the tin. Its supposed to make 12 regular cupcakes, but somehow I ended up short some batter.
After they are done and slightly cooled, the tops are dipped in melted butter and then dipped in a cinnamon sugar mixture.
The finished product:
I don’t know what they taste like yet… Its too late at night for sweets (I’ve already had my fair share of carbs today), so I will taste one tomorrow and see.
